Basil & Garlic Beef Tenderloin With Tomato & Broccolini Salad

Tomato & Broccolini Salad, Serves 2-4.


  • 3 vine-ripened tomatoes, sliced
  • 1/2 cup chick peas
  • 1/2 cup bocconcini mozzarella, halved
  • 3 cups broccolini, chopped
  • 1 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • garlic salt
  • black pepper

Heat the olive oil on medium heat and cook the broccolini for about 5-7 minutes. This is just enough time for them to cook slightly but remain crunchy. Allow it to cool to room temperature. In a large bowl, mix together the tomatoes, mozzarella, chick peas, broccolini and a dash of garlic salt and black pepper.

Basil & Garlic Beef Tenderloin, Serves 2-4


  • beef tenderloin
  • 1 cup basil leaves
  • 1 lemon
  • 1 tbsp minced garlic
  • garlic salt
  • Trader Joe’s 21-Seasoning Salute (or another herb mixture)

In the food processor, add the basil leaves, the juice from 1 lemon, a generous dash of 21-Seasoning Salute and the minced garlic. Do a rough chop of the ingredients and then take the mixture and put it onto your beef tenderloin. Make sure that both sides are coated and season with a dash of garlic salt. Place in a 375 degree oven for about 30-35 minutes or until it reaches the desired temperature. After it’s cooked, allow it to rest for about 10-15 minutes before slicing it.
